Milan Radicchio


The Radicchio Milan, `Cichorium intybus,' will add a unique flavor to any salad. This self-heading variety is very easy to grow, and looks wonderfully beautiful with its deep red color and strikingly white veins. When added to a salad, it will provide a distinctive, desirable and slightly bitter flavor. This radicchio is also delicious saut‚ed with butter and garlic, or eaten with slices of fresh tomatoes. The head should be cut above the crown, and it will often re-sprout to produce another head in the autumn. The outer leaves should be removed until all that remains is the inner heart with its white veins.
