The Summer Squash Scallop Blend, `Cucurbita pepo (Hybrid),' is a mixture of the best differently colored Patty Pan varieties of squash. This mixture will have a slightly spicier and nuttier flavor than any other summer squash. This mixture includes Peter Pan and Sunburst, which are both All America winners, as well as Early White, which is an Heirloom variety that dates back to the early 1700's. The vegetables should be harvested as soon as they reach three to four inches in diameter.
